Spanish Needles Flax Crackers

INTRODUCTION

Flax crackers are a delicious alternative to traditional wheat crackers and this version is full of wild nutrition.  They are amazing on their own, even better dipped into one of our wild pestos!

This recipe was adapted from CleanGreenSimple.com

INGREDIENTS

2 cups ground flax
1 cup Spiny Amaranth greens, chopped fine
1 cup water
1/2 teaspoon salt
1/2 teaspoon garlic
1/2 teaspoon onion powder
1 tablespoon dill

STEP 1

Preheat oven to 400 degrees F.

STEP 2

Combine all ingredients in a large bowl and mix until you have an even dough.

STEP 3

Cover a cookie sheet with parchment paper and spread dough evenly across, about 1/8-1/4 inch thick. It’s easiest to use your fingers. Additional water can help to smooth and work with the dough if it gets too sticky.

STEP 4

Use a butter knife to draw lines, creating square shaped crackers to easily snap apart once baked.

STEP 5

Bake for 20-30 minutes, until crisp with browned but not burnt edges.

STEP 6

Flip whole sheet over on parchment and toast in oven for another 10-15 minutes.

STEP 7

Remove, snap apart, and enjoy!
