INTRODUCTION

This version of a traditional pesto is sure to please – we love it on pasta, on steamed veggies, as a dip, anyway you use the original…enjoy!

INGREDIENTS

1 cup tightly packed Spiny Amaranth greens
1 cup basil
1/2 cup olive oil
1/4 cup pine nuts
1/2 cup parmesan, grated
2 cloves garlic

salt and pepper to taste

STEP 1

Add Spiny Amaranth greens, basil and oil to the blender.  Mix together.

STEP 2

Add all other ingredients.  Mix.  Taste and adjust salt and pepper.  Blend until a paste forms.

STEP 3

Keep tightly sealed in the refrigerator and enjoy!
