Java Plum Granita

INTRODUCTION

A recipe created during the Eat Local Maui Challenge with Project Locavore, this is made using 100% local ingredients. You will need honey that is liquid, not crystallized, at room temperature. This simple, easy, and sure to please recipe is like making your own shave ice.

INGREDIENTS

2 cups java plum juice

1/2 cup lime juice

1/4 cup honey

pinch of salt

STEP 1

Visit the hyperlink above to make Java plum juice. If you’ve previously made Java plum juice and froze it, then unthaw before making.

STEP 2

Mix all ingredients thoroughly. I love using black lava salt, but any salt will do and you can also skip this ingredient. It can be helpful to use a container with a sealed lid so you can shake the mix and incorporate all the honey, or just stir thoroughly until honey has dissolved.

STEP 3

Put mix into a shallow pan and place into freezer.

STEP 4

After 1 hour remove from freezer and begin scraping with a fork. Place back into freezer for roughly one more hour, and repeat the process, until all liquid is frozen and scraped into small flakes.

STEP 5

Serve immediately, or save for later.

    I love this. Maybe one day I will get to try Java plum. I’ll have to try it with my grapes next fall. We drank all the juice we made it was so good. Happy New Year’s Sunny!
