INTRODUCTION

This is a relaxing caffeine-free tea, full of antioxidants. It’s the perfect iced drink to enjoy on a warm day. Thanks to Chef Sarah Burchard for this recipe!

INGREDIENTS

10 roselle buds (yields 1 tablespoon dried petals)
1 cup water
1 teaspoon honey
15 drops kahili ginger hydrosol
1 wedge of lime
1-2 thyme sprigs

STEP 1

Peel the calyxes (petals) off the roselle capsules (buds), place on a plate and dry at room temperature for 2 days.

STEP 2

In a small saucepan, combine the dried calyxes with 1 cup water and bring to a boil. Then, lower the heat and simmer for 3 minutes.

STEP 3

Remove from the heat and whisk in the honey.

STEP 4

Strain the liquid into one large or two small cups filled with ice.

STEP 5

Add the Kahili Ginger hydrosol, a squeeze of lime, and a fresh thyme sprig. Enjoy!
