Kahili Ginger Masala Chai

INTRODUCTION

This tea is a wild take on a traditional favorite, using Kahili Ginger rhizome with a blend of beloved spices to create a warming and comforting treat. We like to enjoy this brew with a circle of friends or make a batch and heat it cup by cup in the mornings.

INGREDIENTS

4 cups water

2 whole star anise

1/2 Tablespoon ground cardamom

12 whole cloves

2 cinnamon sticks or 2 tablespoons ground cinnamon

1 large piece Kahili Ginger rhizome OR

2-5 tablespoons kahili ginger powder Kahili Ginger powder

1 teaspoon crushed black peppercorns

2 bay leaves

8 bags black tea (or equivalent loose)

4 cups milk of choice, hot

1/4 cup honey, or brown sugar

STEP 1

Combine all ingredients except milk and sweetener, and boil for 10 minutes.

STEP 2

Strain.

STEP 3

Add the hot milk, and mix, with your choice of honey or brown sugar.

STEP 4

Enjoy! This makes about 8 cups.
