Java Plum Vinaigrette

INTRODUCTION

The sweet-tart juice of Java Plums adds nutrition and depth to this vinaigrette. Try it on salads or as a marinade.

INGREDIENTS

1 cup olive oil

1/2 cup balsamic vinegar

1/4 cup Java Plum juice

1 Tablespoon honey

1/4 teaspoon salt

1 garlic clove

STEP 1

Make Java Plum juice.

Place Java Plums into a pot and barely cover with water. Heat on medium-high, watching the pot – remove from heat just before the water starts to boil.

Remove the fruit and place into a nut milk bag or strainer and place it above a container. Allow the juice to drain; when cool enough to touch, squeeze the rest of the juice into the container.

STEP 2

Combine Java P lum juice, honey, salt, vinegar and garlic in blender and blend on low-medium.

STEP 3

While the blender in on, slowly add oil to reach your desired consistency.
