Java Plum Tapenade

INTRODUCTION

This totally unexpected and creative use of Java plums comes from Chef Samantha Schaberg. Check out her work here: https://www.instagram.com/beurrenoisette.maui/

INGREDIENTS

½ pound java plums
2 tablespoons Better than Bouillon Beef Flavor

STEP 1

Place the washed java plums in a pot of cold water and bring the pot to a boil. Allow the java plums to boil for 10 minutes, not too long.

STEP 2

Strain the java plums and de-seed them by hand. This is the time intensive but important part of this process.

STEP 3

With the java plum meat in a bowl, add the two tablespoons of the bouillon and mix. Allow to cool and marinate.

STEP 4

Jar and enjoy!
