How to Process Flexible Green Pods

INTRODUCTION

Learn all the tips and tricks by watching this video on harvesting and water soaking haole koa green pods.

INGREDIENTS

STEP 1

Harvest the thin, flexible pods of haole koa that have small seeds inside.

STEP 2

Rinse them.

STEP 3

Take a scissors and cut off the end that was attached to the tree, at an angle, and discard. Then cut remaining pod into thin pieces. The edges of the pod may be thick, you can remove them if you want.

STEP 4

Put cut pieces of pod into a bowl with water. Cover with a clean kitchen towel and set aside.

STEP 5

Strain out water and rinse after 12 hours. Refill bowl with water and cover again with clean kitchen towel. Note, you can rinse and refill with water as many times as you like. What you are looking for is any mold/bacteria/yeast formation on the surface of the water, which you want to remove and then refresh the water. Air temperature and other environmental factors will effect the soaking on haole koa green pods, so keep an eye on them and if there are small amounts that form on surface it isn’t a big deal just wash it away and as long as the washed julienned pods smell good after thorough rinsing they are fine.

STEP 6

Strain out water and rinse after 12 hours. Refill bowl with water and cover again with clean kitchen towel.

STEP 7

Time to use them in your favorite recipe, or you can store them in the refrigerator for later use (best if stored in water so they don’t dry out).
