Guaje and Rajas con Crema

INTRODUCTION

Rajas are strips or slices of poblano chilies. Guaje is the name for haole koa in Spanish. This delicious vegan crema can be eaten as a side dish, put into sandwiches, and more. Recipe by Chef Sofia Flores Florencia @abuelitatechnology

INGREDIENTS

4 poblano chili, deseeded and sliced

1 sweet Maui onion, sliced

1 Tablespoon olive oil

2 Tablespoons green haole koa seeds, soaked or unsoaked
Sunflower Seed Crema

½ cup raw sunflower seeds

1 cup water

1 Tablespoon nutritional yeast

Juice of ½ lemon

Salt to taste

STEP 1

Make the Sunflower Seed Crema by adding all ingredients and blending. This plant-based crema has the best texture results when using a high-speed blender.

STEP 2

Cut the onion in half and slice, saute in a pan along with sliced and deseeded poblanos. Salt a bit so the juices in the onion and pepper release and caramelize.

STEP 3

Once caramelized add the sunflower seed crema and simmer on low heat until desired creamy consistency.

STEP 4

Turn the heat off and sprinkle in the green haole koa seeds. Stir, and serve warm. Cover image shows this served with beans on a tortilla, but you can serve with many things including this tart.
