INTRODUCTIONS
This loaf of bread is an adaptation of a recipe called “The Life-Changing Loaf of Bread.” Gluten-free and grain-free, it’s delicious and a great way to enjoy your wild greens.

INGREDIENTS
1 cup sunflower seeds
1/2 cup Spanish Needles greens, chopped
1/2 cup fresh herbs of your choice, copped
1/4 cup ground flax seed
1/4 cup hemp seeds
1/2 cup macadamia nuts (or whatever else you have or prefer)
1 1/4 cup almond flour
1/4 cup unsweetened coconut flakes
2 tablespoons chia seeds
5 tablespoons psyllium husk
1 teaspoon sea salt
1 tablespoon honey
3 tablespoon coconut oil
1 1/2 cup water

STEP 1
Grease a loaf pan with coconut oil. Cover only the bottom of the loaf pan with parchment paper.
STEP 2
Combine all dry ingredients in a bowl.

STEP 3
Melt coconut oil; add honey and combine, being sure not to boil the mixture.
STEP 4
Add oil and honey to the dry ingredients. Stir throughout.
STEP 5
Add water and stir throughout.
STEP 6
Spoon the mixture into the loaf pan and smooth it out. Let sit at room temperature for a minimum of 2 hours or overnight.
STEP 7
Bake for 20 minutes at 350°. Remove it from the oven and the pan.
STEP 8
Place the loaf on a wire rack in the oven and bake for another 40 minutes until the sides are browned.
