INTRODUCTION
Shrub is a syrup made from fruit and preserved with vinegar. It’s refreshing mixed with water or in a cocktail and it brightens dressings, sauces, and marinades.
INGREDIENTS
STEP 1
Weigh the fruit. For every one pound of fruit, use 3/4 cup of sugar and 3/4 cup of vinegar. (For example, if you have 8 pounds of fruit, you’ll use 6 cups of sugar and 6 cups of vinegar.)
STEP 2
Place the fruit and the sugar into a non-metal* vessel. Using clean hands, massage the mixture thoroughly, ensuring that the sugar macerates all of the fruit.
STEP 3
Cover the vessel and place it in the refrigerator for 24 hours.
STEP 4
After 24 hours, add vinegar to the mixture and massage thoroughly. Cover it and put it back into the refrigerator for another 24 hours.
STEP 5
After 24 hours, strain the liquid, using either nut milk bags or a fine-mesh strainer. We like to hang the nut milk bags and allow the liquid to drain before squeezing out the rest.
