Green Pod Salad

INTRODUCTION

Such a fantastic use of the flexible green pods of haole koa, the ones which don’t form large green seeds! This recipe inspiration comes from Food Foodz –> watch here. You can of course cut the pods into different shapes, but the fine julienne at an angle has a great mouth feel and texture.

INGREDIENTS

2 cups haole koa pods, julienned on an angle

1/2 cup red onion, finely chopped

1/2 cup tomato, chopped

1/4 cup roasted peanuts, chopped

2 tablespoons green chillies, minced

1/4 cup mint, rough chop

1/4 cup cilantro, rough chop

juice of 1 lemon

salt, to taste

STEP 1

Rinse pods in water.

STEP 2

Cut into thin long julienned strips.

STEP 3

You can use them immediately unprocessed to prepare the dish, or follow how-to instructions here for processing.

STEP 4

Mix all ingredients together and serve.
