Spanish Needles Cheezy Chips

INTRODUCTION

Like kale chips?  Try our wild version!  We’ve combined Spanish Needles and nutritional yeast for a “cheesy” treat, perfect for snack time.

INGREDIENTS

6 ounces Spanish Needle greens
1/2 cup Walnuts
2 tablespoons olive oil
1/2 teaspoon salt
pinch of cayenne pepper
1 teaspoon garlic powder
1 tablespoon sunflower seeds

4 tablespoons nutritional yeast

STEP 1

Pre-heat oven to 300 degrees F.

Chop Spiny Amaranth greens and place in a mixing bowl.

STEP 2

Drizzle oil on the greens, mixing them until all are lightly coated.

STEP 3

Add walnuts, sunflower seeds, 3 tablespoons nutritional yeast, garlic powder, salt, and cayenne to blender or food processor. Pulse, pausing occasionally to scrape sides. Continue until mixture is a consistent texture.

STEP 4

Add nutty mixture to the Spiny Amaranth greens and toss by hand to evenly cover.

STEP 5

Line a baking sheet with parchment paper and spread greens across in an even layer, with minimal overlap. Use a second baking sheet if needed.

STEP 6

Sprinkle an additional 1 tablespoon of nutritional yeast overtop for additional flavor.

STEP 7

Bake for 15-20 minutes. Remove, flip, and toss greens for even baking.

STEP 8

Bake for an additional 10 minutes, or until chips are brown and crispy.

STEP 9

Once completely cooled, store in an airtight container and consume within 3 days for crisp texture.
